This is how I like to cook salmon in the Winter (i.e., inside and not in the frozen backyard by the grill). Light a candle immediately after dinner, and cook 2x what you need as leftovers are great over salad. 

Ingredients

  • Salmon (farm raised if you like fatty/juicy flesh, wild sockeye if you like more dry flesh and more fish taste)
  • Northwest Salmon rub
  • Olive oil

Instructions

Mmm salmon my way:

  1.  Preheat over to 350 bake
  2.  Take salmon out of fridge 15 min ahead 
  3.  Heat pan on med-high
  4.  Northwest salmon spice both sides generously
  5.  Once hot, a few drops of olive oil 
  6.  Sear skin side up 2 minutes
  7.  Sear skin side down 2 minutes
  8.  Transfer pan to oven, 4 minutes
